To grasp the secrets of this region’s cuisine, one must turn to the territory: Norcia’s truffles, oil (Umbria produces five extra virgin PDO – Protected Designation of Origin – oils), pecorino cheese, lamb, PGI – Protected Geographical Indication – vegetables (like Trevi’s black celery), and world famous wines.
